recipe time.

i haven't been cooking that much since starting uni,but during the last two days i have come up with two amazing meals.

i was sat in my room with a cold (which is still lingering in my immune system),but realised that i could make two rather economical meals that would cost me next to nothing.

so,if you're willing to try out my sweet potato with emmental cheese and peppered salami,or my tuna and sweetcorn noodles, then here are my recipes. Believe me,you'd be amazed what you could find in your local Aldi/Lidl,as well as Schogetten chocolate.

Sweet Potato with Emmental Cheese and Peppered Salami (serves 1)

You will need:

1 sweet potato (or,if you are intending to have a dinner party or what have you, they do come cheap-I got mine for 25p)

Emmental Cheese (I get the sliced packs-cost me £1.09 from Aldi-11p a slice isn't too bad)

Peppered salami (79p from Lidl's for about 12 slices,so that'll be 7p a slice)

Some butter to moisten the potato

Salt and pepper

1.Prick holes in the sweet potato with a fork (otherwise it won't cook properly)
2.Put the sweet potato in the microwave for 4 minutes, and then cut it in the middle.
3.Put some butter in the middle of the sweet potato, then put it into the microwave for another 20-30 seconds.
4. Take the sweet potato out of the microwave, and put a slice of Emmental cheese (or whatever you choose to use) in the middle of the sweet potato, then put it back in the microwave for 30-40 seconds.
5. Tear the salami into small pieces, then garnish with salt and pepper.

Tuna and Sweetcorn Noodles (serves 1,depending on the size of your noodles :p)

You will need:

1 small pack of noodles (my mum packed these up for me when I first went to uni,in this recipe I used chilli, but it wasn't that overpowering)

1/2 tin of sweetcorn (I used Green Giant Salad Crisp, cost me 45p for a small tin)

a small tin of tuna with sunflower oil (you can get this from some smaller supermarkets-I bought mine from an Indian supermarket on the Rusholme Curry Mile-they stock pretty much anything to do with food)

I also used a bit of salad dressing to give it an individual kick, but of course, this is optional.

1. Drain the noodles using cold water,in order to untangle them before cooking.
2. Set the hob to a reasonable temperature, and put some sunflower oil in the wok (or whatever cooking instrument that you choose to cook your noodles in)
3. Put the noodles into the wok and start tossing them around in the oil so they do not burn.
4. When the appearance of the noodles changes so they look cooked, put the tuna and sweetcorn in and stir until cooked.
5. Serve and drizzle some of the salad dressing over the top.

These are probably the best student meals that I've come up with so far (in comparison to Gordon Ramsay next door, who I hasten to add left his festering soup mix out for the inspectors to see),but feel free to have a try for yourself. I might put my red leicester, cucumber and tomato on soda bread recipe that my uncle does (but with dubliner irish cheddar). Enjoy, for I now have to finish a spreadsheet, word and powerpoint assignment,as well as a sociology essay in order to have a nice birthday weekend. Ciao for now.

back in the manc.

i came back on sunday afternoon for another fun filled week of university, after having spent it back home at my mum's. so far it's been a melting pot of emotions and struggle, but today i finally came through the end of the tunnel.
i bought some nice new clothes for myself as well,in motivation for doing my sociology assignment in the next week. tomorrow is my ''nose to the grindstone day''. i ended up spending the best part of my weekly budget on a pair of £3 jeans,2 tops and some tights,as well as food. and on sunday i need to travel to eccles for a socialist stall, then i'll probably walk up to cheetham hill and stock up on tiffin bars and red lemonade to keep me going until i finish my assignments next week.
i also discovered the merits of 29p yogurt from lidl's,which is literally 2 minutes from me,as well as cheaper washing up liquid from aldi-they also stock schogetten milk chocolate,so i'm very happy about that. also,it did me the world of good walking back into manchester this evening- i walked home and stopped for a bag of popcorn chicken at allen's,(next to the now shut down dutch pancake house),and walked home eating it (I was happy to discover that they had chucked some chips in there as well) and also 27p shampoo and 36p baby bath (no,i'm not a paedo, nor do i have a secret child,i'm just economising) from tesco's. beats spending £3 odd pound on herbal essences and imperial leather.
anyway,i am off to sleep now,and i shall wake up in the morning and paint my nails red.
love :)
